Perfect for Home Parties! Tangy Lemon Butter Somyeon Noodles Instead of Pasta

These are somyeon noodles made to resemble pasta! While pasta is also delicious, I chose somyeon this time to reduce the portion size, as I planned to serve it alongside meat dishes and salad. This recipe yields enough for 2 people. (Tip: The broccoli used here is leftover from a salad I made previously. Using green onions would also be wonderful! The broth is from when I made Lemon Butter Chicken in a prior recipe.)

Ingredients
  • Somyeon noodles, 1 serving
  • Shrimp, 10 pieces
  • Broccoli, about 50g
  • Broth (optional) 50ml
  • Milk 50ml
  • Butter 20g
  • Pepper, a pinch
  • Salt, 1 teaspoon
  • Garlic, 1 clove
  • Olive oil, as needed

Cooking Instructions

Step 1

Heat olive oil in a pan over medium-low heat. Add finely minced garlic and sauté until fragrant. (Tip: Simultaneously, bring a pot of water to a boil to prepare for cooking the somyeon noodles.)

Step 2

Once the garlic is fragrant, add the shrimp and sauté until they change color.

Step 3

When the shrimp are almost cooked, add the chopped broccoli and stir-fry together for about 1-2 minutes. (Tip: Pre-heating the broccoli in the microwave for a short time will reduce cooking time and make the texture even softer.)

Step 4

Lower the heat slightly and add the butter, salt, and pepper. Sauté gently as the butter melts, allowing it to combine with the ingredients. (Tip: Once the water is boiling, add the somyeon noodles and cook.)

Step 5

Pour the 50ml of broth and 50ml of milk into the pan. If you don’t have broth, you can increase the milk to 100ml. Stir and bring to a simmer, ensuring the sauce coats the ingredients well. (Tip: If the somyeon noodles are not yet cooked, turn off the heat temporarily and wait for them to finish cooking before proceeding with this step.)

Step 6

Rinse the cooked somyeon noodles thoroughly under cold water to remove excess starch, then drain them completely in a colander.

Step 7

Add the drained somyeon noodles to the pan with the sauce. Cook over low heat, gently tossing to coat the noodles evenly with the sauce for about 1 minute.

Step 8

Transfer the finished lemon butter somyeon noodles to a serving plate.

Step 9

Finally, squeeze fresh lemon juice over the noodles to taste for an added burst of tanginess.

Step 10

Garnish with lemon slices, if desired, for a beautiful presentation. ( ´∀`)
