Cabbage is incredibly healthy, and eating it raw is a great way to get its benefits. However, some find raw cabbage too tough, or it can cause digestive discomfort like gas. For those instances, a quick blanch is the perfect solution! By lightly steaming the cabbage and then tossing it with flavorful perilla seeds and a tangy dressing, you’ll have a delicious and satisfying cabbage salad ready in no time. It’s wonderfully refreshing and a great accompaniment to any meal.
Ingredients- Cabbage 500g
- Ground Perilla Seeds 3 Tbsp
- Sugar 1 Tbsp
- Vinegar 2 Tbsp
- Salt 1/2 tsp
- Water 1 Tbsp
Cooking Instructions
Step 1
First, wash the 500g of cabbage thoroughly. Then, thinly and finely shred it. The thinner you slice it, the better the dressing will adhere and the more pleasant the texture will be.
Step 2
Place the shredded cabbage into boiling water for a very short time – just 10 to 20 seconds. This brief blanching keeps the cabbage crisp while softening any tough fibers, without making it mushy. Be careful not to overcook it.
Step 3
Immediately transfer the blanched cabbage to cold water to cool it down. Once cooled, firmly squeeze out as much excess water as possible using both hands. Any remaining water can dilute the flavor of the salad.
Step 4
To the squeezed cabbage, add all the dressing ingredients: 3 Tbsp ground perilla seeds, 1 Tbsp sugar, 2 Tbsp vinegar, 1/2 tsp salt, and 1 Tbsp water. Gently mix everything together until well combined. Your delicious cabbage and perilla seed salad is now ready to serve!
