Main Ingredients- 2 large pre-cooked octopus tentacles
- 50g fresh water parsley (minari)
- 1/4 medium onion
- A small amount of red bell pepper
Dressing- 3 Tbsp store-bought Gochujang (Korean chili paste)
- 1 tsp fresh wasabi paste (or mustard, adjust to taste)
- 3 Tbsp store-bought Gochujang (Korean chili paste)
- 1 tsp fresh wasabi paste (or mustard, adjust to taste)
Cooking Instructions
Step 1
Begin by preparing the pre-cooked octopus tentacles. Take two large tentacles and thinly slice them into bite-sized pieces. Using pre-cooked octopus makes this recipe wonderfully quick and easy.
Step 2
Wash the water parsley thoroughly and use only the stems. Cut them into approximately 5cm lengths. Thinly slice the onion and julienne the red bell pepper into similar-sized pieces. Combine all the prepared vegetables in a bowl.
Step 3
In a large mixing bowl, add 3 tablespoons of store-bought gochujang. Add the sliced octopus to the bowl and gently toss to coat the octopus evenly with the gochujang, allowing it to marinate slightly.
Step 4
Now, add the chopped water parsley, sliced onion, and julienned bell pepper to the bowl with the octopus. Stir in 1 teaspoon of fresh wasabi paste (or mustard) for a zesty, spicy kick. You can adjust the amount of wasabi to your preference or omit it entirely if you prefer less heat. Gently mix everything together until the dressing is well distributed.
Step 5
Your delicious and refreshing Octopus and Water Parsley Salad is now ready! The delightful chewiness of the octopus, the crispness of the water parsley, and the vibrant sweet and sour dressing create a truly memorable dish. Enjoy!
