- 1/2 Tbsp Honey (adjust based on melon’s sweetness)
- 1 pinch Salt (to balance the flavors)
Optional Ingredients (For Extra Flavor!)- 1/4 tsp Pink Peppercorns (for elegant flavor and color)

Cooking Instructions
Step 1
Since we’ll be leaving some of the melon’s peel on, wash it thoroughly under running water. Using a fruit-specific cleanser will give you extra peace of mind.

Trim off the very ends of both sides of the melon.

We’ll use a peeler to remove some of the melon’s skin. The trick is not to peel it completely, but to leave some on.

Peel the melon unevenly, so that patches of the yellow skin are still visible. This makes the salad look more appealing.

Cut the melon in half lengthwise.

Scoop out the seeds from the center of each half. Place the seeds and any juice in a sieve to separate the juice. This melon juice will be the key ingredient for our delicious dressing.

Carefully scoop out the pulp from the center of the melon with a spoon. It’s good to remove the seeds but leave a little bit of flesh. Don’t discard this scooped-out part! It will also be used for the dressing.

You can slice the melon however you like. Thin slices look prettier and absorb the dressing better, making them more delicious. I sliced mine into thin half-moon shapes, about 2-3mm thick.

Now, let’s make the star of the melon salad: the dressing! Take the scooped-out melon pulp from earlier and strain it through a sieve again to get clear juice. We’ll only use the pure melon juice.

To the strained clear melon juice, add 1 tablespoon of fresh lime juice. The lime’s zestiness will enhance the melon’s natural sweetness.

Add 1/2 tablespoon of honey. If the melon you’re using isn’t very sweet, feel free to add a little more honey. If the melon is naturally sweet enough, you can skip this.
