Tart Shell Dough- 32g unsalted butter, softened
- 25g powdered sugar
- 18g egg (room temperature)
- 70g cake flour
- 20g almond flour
Cream Cheese Filling- 120g cream cheese, softened
- 58g granulated sugar
- 50g egg (room temperature)
- 18g unsalted butter, softened
- 1 tsp lemon juice
- 35g heavy cream
- 5g cornstarch
Cream Cheese Frosting- 50g cream cheese, cold
- 25g heavy cream, cold
- 10g granulated sugar
- Fresh strawberries (for decoration)

Cooking Instructions
Step 1
Let’s start by making the delicious tart shell. In a bowl, place the softened unsalted butter and cream it until smooth using a whisk or spatula.

Add the powdered sugar and mix well until combined. Then, gradually add the room-temperature egg while mixing continuously to ensure a smooth, emulsified mixture.

Sift in the cake flour and almond flour. Gently mix with a spatula until just combined and a cohesive dough forms. Be careful not to overmix, as this can result in a tough crust.

Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 1 hour. Chilling the dough makes it easier to handle and prevents shrinkage during baking.

Divide the chilled dough into 3 portions. Roll out each portion slightly larger than your tartlet molds. Carefully press the dough into the molds, ensuring it adheres well to the bottom and sides. While the tart shells are baking, let’s prepare the luscious cream cheese filling. In a bowl, beat the softened cream cheese until smooth. Add the granulated sugar and mix well. Then, add the room-temperature egg and continue mixing until fully incorporated and smooth.

Add the softened unsalted butter and mix thoroughly until no lumps remain. Stir in the lemon juice for a touch of brightness.
