Main Ingredients
- 80g Sea lettuce (Muparae)
- 150g Radish

- 1 Tbsp Coarse salt
For Salting Radish

Cooking Instructions
Step 1
First, slice the red chili pepper lengthwise, remove the seeds, and then finely chop it into bite-sized pieces. This adds a beautiful color and enhances the flavor.

Wash the radish, peel it, and then julienne it thinly, similar to how you would prepare it for a fresh salad (saengchae). Maintaining the radish’s crispiness is key.

Add 1/2 Tbsp of coarse salt to the julienned radish and gently mix. Let it sit for about 30 minutes to draw out moisture. You’ll notice a lot of water will accumulate. Do not rinse the radish; instead, place it in a sieve and press out as much water as possible with your hands. This prevents the radish from becoming soggy and retains its crunchy texture.

While the radish is salting, it’s time to clean the fragrant sea lettuce. Add 1 Tbsp of coarse salt to the sea lettuce and rub it vigorously under running water to remove any impurities. Washing with salt helps to thoroughly clean the seaweed, removing any grit or unwanted particles.

After washing, squeeze out as much water as possible from the sea lettuce with your hands. Then, use kitchen scissors to cut it into manageable, bite-sized pieces. Cutting it into appropriate lengths will make it easier to eat.

Add the squeezed sea lettuce, the drained radish, and the chopped red chili pepper to the bowl with the dressing.
