Main Ingredients- 1 bowl cooked rice (preferably day-old and chilled from the refrigerator for best texture)
- 1/4 large green onion, finely chopped
- 2 eggs
- 1/2 piece bacon, diced
- 6 large shrimp, peeled and deveined
- 7 slices pineapple (fresh or frozen)
Seasoning- 1/2 Tbsp rice noodle sauce (or fish sauce)
- 1/2 Tbsp peanut butter
- 1/4 Tbsp chili oil with chili seeds
- 1/2 Tbsp rice noodle sauce (or fish sauce)
- 1/2 Tbsp peanut butter
- 1/4 Tbsp chili oil with chili seeds
Cooking Instructions
Step 1
The secret to great fried rice is using cold, day-old rice. Refrigerate your cooked rice overnight. This helps the grains stay separate and prevents mushiness when stir-frying.
Step 2
Heat 2 tablespoons of olive oil in a wok or large skillet over medium-low heat. Add the chopped green onion and sauté until fragrant, about 1-2 minutes. This step creates a delicious aromatic base.
Step 3
Push the green onions to one side of the pan. Crack the 2 eggs into the empty space. Once the eggs begin to set, scramble them, breaking the yolks and mixing them with the whites as they cook. Cook until just set, then gently break them into smaller pieces.
Step 4
Turn off the heat temporarily. Add the cold rice to the pan, breaking up any clumps with your spatula or spoon. Stir-fry the rice briefly to warm it through and loosen the grains. Add the diced bacon and turn the heat back up to medium, cooking until the bacon is slightly crispy and has rendered its fat.
Step 5
Add the prepared shrimp to the pan. Stir-fry everything together for about 1-2 minutes, or until the shrimp turns pink and is cooked through. Ensure all ingredients are evenly distributed.
Step 6
Now for the flavor! Add the rice noodle sauce (or fish sauce), peanut butter, and chili oil with seeds. If your chili oil has peanuts at the bottom, scoop those in too for extra texture and nutty flavor. Stir everything together until the sauce coats all the ingredients evenly.
Step 7
Finally, add the pineapple slices. Gently toss to combine, stir-frying for just about 1 minute or less. You want to warm the pineapple through without making it too soft or mushy. The pineapple will release some juice, adding a delightful sweet and tangy finish to your fried rice. Enjoy your delicious homemade Pineapple Fried Rice!
