Ingredients- 930g Zespri Green Kiwis (about 8 pcs)
- 310g Granulated Sugar (approx. 1/3 of kiwi weight)
- 4 Tbsp Lemon Juice
Cooking Instructions
Step 1
Let’s begin by gathering our ingredients for a delicious kiwi compote. Using fresh, ripe Zespri green kiwis will ensure a wonderfully vibrant flavor. We’ll use 8 jumbo-sized green kiwis for this recipe.
Step 2
Peel the skin off the kiwis thoroughly. They should peel easily if they are ripe.
Step 3
Once peeled, finely dice the kiwis into bite-sized pieces. This will give a pleasant texture when you eat the compote. Dicing them small also helps them cook evenly and faster.
Step 4
Set aside about 1/4 of the diced kiwis. These will be added later to maintain some fresh texture and vibrant color. Place the remaining diced kiwis into a saucepan.
Step 5
Pour the 310g of granulated sugar evenly over the kiwis in the saucepan.
Step 6
Place the saucepan over medium heat. Gently stir with a spatula until the sugar begins to dissolve.
Step 7
After about 5 minutes on medium heat, the mixture will start to bubble as the kiwi releases its natural juices. Reduce the heat slightly and continue to simmer for approximately 10 minutes, stirring occasionally. This process helps to soften the kiwi and concentrate its flavor.
Step 8
Once the compote begins to thicken slightly, lower the heat to low. Stir in the 4 tablespoons of lemon juice and continue to simmer for another 5 minutes. The lemon juice adds a lovely brightness and helps preserve the kiwi’s beautiful green hue.
Step 9
Check the consistency. The compote should be nicely thickened. If it’s too thin, simmer a bit longer; if it becomes too thick, you can add a tiny splash of water to adjust.
Step 10
Finally, stir in the reserved fresh diced kiwis. Adding them at the end keeps some pieces from breaking down completely, offering a delightful texture contrast and preserving some of the bright, fresh green color of the kiwi.
Step 11
Turn off the heat immediately after mixing in the fresh kiwi. The compote will continue to thicken as it cools. I prefer mine with a bit more syrup, so I didn’t cook it down too much – feel free to adjust the simmering time to your liking.
Step 12
Allow the kiwi compote to cool completely. Once cooled, transfer it into sterilized jars and store it in the refrigerator. It will stay fresh for over a week.
Step 13
Get creative and use your homemade kiwi compote to make wonderful desserts! It’s fantastic on toast, swirled into yogurt, or spooned over ice cream. Enjoy the delightful taste!
