Cake Ingredients- 2 pints fresh strawberries (approx. 1kg)
- 3 store-bought sponge cakes
- 100g cream cheese
- 1.5 cups whipping cream (approx. 360ml)

First, let’s prepare the star of our delicious strawberry cake: the strawberries. We’ve got two pints, usually about 500g each. Even if they’re on the smaller side, they’re in season and packed with flavor!

Washing the strawberries thoroughly is key. Gently rinse them in a bowl of water with a little baking soda or vinegar, then rinse again under cold running water. Drain them well in a colander, and then gently pat them dry with paper towels to remove as much moisture as possible. This prevents the cake from becoming soggy. Remove the green tops and slice the strawberries in half for decoration and layering.
Step 3
For the cake layers, we’ll use store-bought sponge cakes. I picked up a pack of three from the grocery store. These will serve as a wonderful base for our cake.

Slice the sponge cakes thinly, about 2-3 cm thick, to create your cake layers. Using a serrated knife will help you cut cleanly without crumbling. Prepare about three sliced cakes.

Now, let’s make the creamy frosting. In a bowl, add 100g of softened cream cheese. I used a convenient stick cream cheese, which is easier to whip when it’s at room temperature.

Pour in 1.5 cups (about 360ml) of fresh whipping cream. Using good quality, fresh cream will give you the best flavor.

Using a hand mixer or a whisk, whip the cream cheese and whipping cream together until stiff peaks form. This means when you lift the whisk, the cream holds its shape and doesn’t curl over. Be careful not to over-whip, as it can separate.

Prepare a square glass dish or container for your cake. Start by placing a layer of your sliced sponge cake at the bottom, fitting the pieces together snugly. This will be the first cake layer.
