Main Ingredients- 80g Dried Cranberries
- 100g Small Dried Anchovies
- 1 Tbsp Rice Wine (Cheongju)
Seasoning- 1/2 Tbsp Soy Sauce
- 1/2 Tbsp Fish Sauce
- 1 Tbsp Mayonnaise
- 2 Tbsp Honey
- 1/4 Tbsp Ginger Powder
- 1 Tbsp Toasted Sesame Seeds
- 1/2 Tbsp Soy Sauce
- 1/2 Tbsp Fish Sauce
- 1 Tbsp Mayonnaise
- 2 Tbsp Honey
- 1/4 Tbsp Ginger Powder
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
If you’d like a spicy kick, prepare some finely chopped Cheongyang chili peppers. You can also add nuts like walnuts or almonds while stir-frying for added texture and nutrition.
Step 2
First, heat a dry pan over low heat. Add the small dried anchovies and dried cranberries. Pour in 1 tablespoon of rice wine to eliminate any fishy odor and prevent the anchovies from becoming too hard. This step ensures the anchovies are tender and less prone to hardening.
Step 3
Now, add a generous amount of cooking oil to the pan and increase the heat to medium. Stir-fry the anchovies. Be careful not to cook them over high heat, as they can burn easily. Anchovies absorb a lot of oil, so using enough oil is key to achieving a crispy and savory result without burning.
Step 4
Once the anchovies are lightly fried, add all the seasoning ingredients (soy sauce, fish sauce, mayonnaise, honey, ginger powder) to the pan. Stir-fry quickly to ensure the seasonings coat the anchovies evenly. Keep an eye on the heat to prevent the seasonings from burning.
Step 5
Finally, add the toasted sesame seeds and mix well. If you prepared the Cheongyang chilies, add them now along with the sesame seeds and mix gently. This adds a delightful spicy touch, enhancing the overall flavor profile. Your delicious Cranberry Anchovy Stir-Fry is now ready!
