How to Make Cherry Tomato Preserve with Plum Extract

Ingredients- 1 pack Cherry Tomatoes (approx. 500g)
- 1 bottle Plum Extract (approx. 1.5L, enough to cover the tomatoes)
Cooking Instructions
Step 1
First, it’s crucial to prepare the glass jar thoroughly. Sterilize it by boiling it upside down in water for about 5 minutes. This sterilization step helps preserve the freshness for a longer period. Ensure the jar is completely dry before using it.
Step 2
Wash the cherry tomatoes under running water and remove all the stems. To make peeling easier, lightly score the bottom of each tomato with a cross shape using a knife. This little step will make peeling much smoother later on.
Step 3
Blanch the scored cherry tomatoes in boiling water for about 30 seconds to 1 minute. Be careful not to overcook them, as they can become mushy. The key is to remove them as soon as you see the skin starting to split or turn slightly translucent.
Step 4
Quickly transfer the blanched cherry tomatoes into an ice bath or very cold water to cool them down rapidly. This rapid cooling helps the skin detach more easily and preserves the fresh texture of the tomatoes.
Step 5
Once cooled, gently peel the skin off the cherry tomatoes, starting from the scored cross. The skin should come off very easily after the cold water bath, revealing the clear flesh underneath. Your tomatoes are now ready for preserving.
Step 6
Carefully place the peeled cherry tomatoes into the sterilized and completely dry glass jar. Avoid packing them too tightly; leave a little space.
Step 7
Finally, pour the plum extract over the tomatoes, ensuring they are fully submerged. Pour slowly from the top to allow the extract to coat the tomatoes evenly. Seal the jar tightly and refrigerate. The preserve will be most delicious after 2-3 days of marinating.
