Main Ingredients- 2 medium sweet potatoes
- 1 hard-boiled egg
- 14 pieces of inari sushi pockets (aburaage)
- 1 slice cheddar cheese
Seasoning & Mix- 1/2 Tbsp mayonnaise
- 1/2 Tbsp allulose (or sugar)
- 1 Tbsp soy milk (optional)
- 1/2 Tbsp mayonnaise

Cooking Instructions
Step 1
First, prepare your 2 boiled sweet potatoes. Once peeled and still warm, place them in a bowl. Use a fork or a masher to mash the sweet potatoes until they are smooth and lump-free. Mashing while warm makes it easier.
Step 2
Mashed sweet potato can sometimes feel a bit dry. For a creamier texture, add 1 tablespoon of soy milk and mash it in. If you don’t have soy milk, a small amount of regular milk or water will also work.
Step 3
To the mashed sweet potato, add the hard-boiled egg (mashed), 1/2 tablespoon of mayonnaise, and 1/2 tablespoon of allulose. Allulose is a great low-calorie sweetener, but you can substitute it with sugar if preferred. Mix everything thoroughly until well combined.
Step 4
Now it’s time to fill the inari pockets. Take your desired amount of the sweet potato mixture and add the cheddar cheese slice, cut into small pieces. Incorporate the cheese into the mix. Dividing the cheese and mixing it in ensures a more even distribution of cheesy flavor throughout the sweet potato filling.
Step 5
Gently open each inari sushi pocket and carefully fill it with the sweet potato and cheese mixture. Be careful not to overfill, as this can cause the pockets to tear. Even at this stage, you’ll have a delicious inari sushi!
Step 6
For an extra touch of deliciousness, place the filled inari sushi in an air fryer and cook for about 5 minutes at 175°C (350°F). This will lightly crisp the inari skin while keeping the filling moist and enhancing its flavor, making them truly irresistible. Adjust the cooking time based on your preference.
