Tteokbokki Ingredients- Rice cakes (Tteok) 1.5 portions (approx. 300g)
- Green onions (Scallions) 1 portion (approx. 100g)
- Carrot 5-6 slices (approx. 30g)
- Apple 1/4 (approx. 50g)
Special Sauce Mix- Soy sauce 3 Tbsp
- White sugar 1.5 Tbsp
- Gochugaru (Korean chili powder) 0.5 Tbsp
- Minced garlic 1 tsp
- Oligodang (corn syrup) 1 Tbsp (or mulyeot/starch syrup)
- Water 2-3 Tbsp
- Soy sauce 3 Tbsp
- White sugar 1.5 Tbsp
- Gochugaru (Korean chili powder) 0.5 Tbsp
- Minced garlic 1 tsp
- Oligodang (corn syrup) 1 Tbsp (or mulyeot/starch syrup)
- Water 2-3 Tbsp
Cooking Instructions
Step 1
Let’s start by making the special sauce that will define the flavor of your Tteokbokki! In a small bowl, combine 3 Tbsp soy sauce, 2 Tbsp water, 0.5 Tbsp gochugaru, 1.5 Tbsp sugar, and 1 tsp minced garlic. Stir well until there are no lumps. Ensuring the sauce is well mixed will help the flavor distribute evenly onto the rice cakes.
Step 2
Now it’s time to prepare the rice cakes. Rinse the rice cakes under cold water. Place the rice cakes in a pot with just enough water to cover them. Bring to a boil over medium heat and cook until the rice cakes soften and become pliable. If your rice cakes are very hard, this softening step is essential.
Step 3
Once the rice cakes are tender, add all the prepared sauce to the pot and stir well to combine. Now, add the roughly chopped green onions, thinly sliced carrots, and the 1/4 apple. The apple will add a subtle sweetness and fruity aroma, enhancing the overall richness of the Tteokbokki.
Step 4
Simmer all the ingredients together until the sauce thickens and coats the rice cakes beautifully. It’s important to let it cook until the sauce is reduced and absorbed by the tteok. If you find the taste too salty, adjust it by adding more oligodang or mulyeot to balance the sweetness. And there you have it – delicious Tteokbokki is ready!
