Cooking Instructions
Step 1
First, prepare the main ingredients for your chili shrimp: the shrimp and the colorful bell peppers that will add a vibrant touch. If you don’t have bell peppers, you can omit them. For the shrimp, we’re using cocktail shrimp. If you prefer a cleaner bite, you can gently remove the deveined line using a skewer, but it’s perfectly fine to use them as they are if you wish.
Step 2
Dice the beautifully colored bell peppers into bite-sized cubes. This cutting method ensures they mix well with the other ingredients and make the dish visually appealing.
Step 3
Now, let’s make the delicious sauce that will define the flavor of your chili shrimp! In a bowl, combine 2 Tbsp ketchup, 1 Tbsp chili powder, 1 Tbsp sugar, 1 Tbsp soy sauce, 1 Tbsp vinegar, and 3 Tbsp water. Mix them well. At this stage, you can adjust the sweetness or tanginess by tweaking the amounts of sugar or vinegar to suit your personal taste. Finally, for that aromatic garlic flavor, add 1 Tbsp of minced garlic to the sauce and mix it in. (Note: We will use an additional 0.5 Tbsp minced garlic for stir-frying.)
Step 4
Heat 3 Tbsp of cooking oil in a pan over medium-low heat. Add the 0.5 Tbsp of minced garlic that you set aside and sauté until fragrant. The key here is to let the garlic infuse its aroma into the oil slowly and gently.
Step 5
Once the garlic starts to release its aroma, add the prepared shrimp to the pan and stir-fry them together. Be careful not to overcook the shrimp, as they can become tough. Cook them just until they begin to change color, then move on to the next step promptly.
Step 6
When the shrimp have turned a lovely pink and become plump, add the diced bell peppers to the pan and stir-fry them along with the shrimp. To maintain their crisp texture, stir-fry the bell peppers only until they are slightly tender and still vibrant in color.
Step 7
Once the vegetables are partially cooked, pour the prepared chili sauce into the pan. Quickly toss and stir to coat the shrimp and vegetables evenly with the sauce. Continue to cook for about 1-2 minutes, allowing the sauce to thicken slightly and cling to the ingredients.
Step 8
Just before turning off the heat, add a piece of butter to enhance the richness and flavor. The melting butter will add a wonderful gloss and depth of flavor to the sauce.
Step 9
Finish with a sprinkle of black pepper to your liking for an extra aromatic touch, and then immediately turn off the heat. Your delicious sweet and spicy chili shrimp is ready! It’s best enjoyed immediately while warm.
