Main Ingredients

  • 1/2 head of Chinese cabbage leaves
  • 1 Tbsp chopped scallion
  • 1 egg

Seasoning & Sauce

  • A pinch of minced ginger
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp soy sauce
  • 1/2 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp sesame oil
  • A pinch of black pepper
  • 3 Tbsp chicken sauce (or chili sauce)
  • 4 Tbsp ketchup
  • 2 Tbsp honey
  • 3 Tbsp water

Cooking Instructions

Step 1

First, let’s prepare to make tender beef patties. Have about 100g of ground beef ready. Take 1/2 of the outer leaves of a Chinese cabbage, wash them thoroughly, and thinly shred them. Shredding the cabbage finely will make the texture of the patties even softer.

In a bowl, combine the ground beef, shredded cabbage, and all the seasoning ingredients. Add a pinch of minced ginger, 1 Tbsp Mirin (or cooking wine), 1 Tbsp soy sauce, 1/2 Tbsp sugar, 1/2 Tbsp minced garlic, 1/2 Tbsp sesame oil, and a pinch of black pepper. (Note: The previous step mentioned 2 Tbsp flour, which is usually added to help bind the patties. If you intend to use it, add 2 Tbsp flour at this stage.) Now, mix everything together with your hands and knead until the mixture becomes sticky and well-combined. Thoroughly kneading the ingredients ensures the cabbage and beef are evenly mixed.

Once the mixture is ready, use a spoon to scoop out portions and shape them into patties that are easy to place in the pan. Aim for a size that isn’t too large and a moderate thickness. Shaping them on a lightly heated pan can make it easier to form them.

Now it’s time to cook the patties. Heat a pan over medium-high heat, then place the formed patties in the pan. Sear both sides until they are golden brown and have a nice, appetizing color.

After searing the outsides, cover the pan with a lid and reduce the heat to low. Cooking slowly over low heat will ensure the patties become moist and tender inside. Let them cook for about 5-7 minutes.

Cooking Tip! You don’t need to add cooking oil for this recipe. The moisture released from the beef and cabbage will prevent them from sticking and ensure they cook evenly. However, if you prefer a richer, slightly greasier taste, feel free to add a small amount of oil to the pan.

While the patties are cooking, let’s make the delicious sweet and spicy sauce. In a small bowl, mix together 3 Tbsp chicken sauce (or chili sauce), 4 Tbsp ketchup, 2 Tbsp honey, and 3 Tbsp water. This will create a sauce with a delightful balance of sweetness that kids will love, and a hint of spice.

Place the sauce pan over low heat and pour in the prepared sauce. Stir the sauce with chopsticks or a whisk until it begins to simmer. Then, carefully add the cooked beef patties to the sauce. Gently swirl the pan to coat the patties evenly with the sauce. Let them simmer in the sauce for about 2-3 more minutes.
