- 300g fresh sea spinach
- 1 Tbsp sesame oil
- 1/2 Tbsp minced garlic
- 1 Tbsp sesame seeds
- 2 Tbsp tuna extract (or fish sauce)
Cooking Instructions
Step 1
First, carefully trim and clean the fresh sea spinach, removing any wilted leaves or dirt. Bring a pot of water to a boil and gently blanch the sea spinach for about 1 to 2 minutes. Sea spinach cooks very quickly, so be careful not to overcook it.
Step 2
Immediately after blanching, rinse the sea spinach under cold running water to quickly cool it down. This step helps retain its crisp texture and vibrant green color. Gently squeeze out excess water. For added reassurance regarding oxalic acid content (which is largely reduced by heat but can be further diluted), you can soak the blanched spinach in cold water for about 5 minutes before proceeding.
Step 3
Place the de-watered sea spinach into a mixing bowl. It’s now time to add the seasonings. Add 1 tablespoon of fragrant sesame oil, 1/2 tablespoon of minced garlic, and 1 tablespoon of toasted sesame seeds for a nutty aroma.

For the dressing, we’ll use tuna extract, which adds a rich umami depth. Tuna extract (or a good quality fish sauce) provides a more complex and savory flavor profile than regular soy sauce, elevating the overall taste of the salad. Add 2 tablespoons of tuna extract to balance the flavors.

Gently toss the sea spinach with the seasonings using your hands – ‘job-job’ (a gentle mixing motion). It’s important to mix lightly to avoid mashing the delicate sea spinach.
