- 3 asparagus spears
- 1 onion
- 50g carrot (about 1/4 medium carrot)
- 1 swirl of cooking oil (approx. 1-2 Tbsp)
Sauce Mixture- 3 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin or sake)
- 1 swirl of oligosaccharide (or corn syrup, approx. 1-2 Tbsp) for sweetness and gloss
- 0.5 Tbsp toasted sesame seeds
- Generous pinch of black pepper
- 3 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin or sake)
- 1 swirl of oligosaccharide (or corn syrup, approx. 1-2 Tbsp) for sweetness and gloss
- 0.5 Tbsp toasted sesame seeds
- Generous pinch of black pepper
Cooking Instructions
Step 1
Begin by preparing 3 cleaned squid (or cuttlefish). If you’ve purchased them pre-cleaned, you’re ready to go!
Step 2
Cut the squid into bite-sized pieces. It’s best to cut them slightly larger than a mouthful, as squid shrinks significantly when cooked. This ensures a satisfying chew.

Wash the 3 asparagus spears and trim off the tough bottom ends. Cut them into large, 2-3 cm pieces. Slice the onion into thick slices or dice it. Cut the 50g carrot into similarly sized pieces. Cutting all vegetables to similar sizes ensures even cooking.

Heat your wok or pan over medium-low heat and add a swirl of cooking oil. Add the minced garlic and gently sauté until fragrant, taking care not to burn it. This step is crucial for developing a deep garlic aroma.
