Main Ingredients- Beef (for Bulgogi) 2kg
- 1 Onion
- 1 bunch King Oyster Mushrooms
- 1 stalk Green Onion
Marinade Ingredients- 1/2 cup Soy Sauce
- 1/2 cup Mirin (Cooking Wine)
- 3 Tbsp Sugar
- 1 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- 1 tsp Black Pepper

Cooking Instructions
Step 1
Getting ready to cook bulgogi always makes my heart flutter! Should I wrap it in lettuce, or just eat it plain with rice?!

For bulgogi-cut beef, soaking it in cold water for about 10 minutes is enough to remove most of the blood. This step helps to reduce any gamey flavor and results in a cleaner taste.
Step 3
Drain the beef on a sieve, ensuring all excess water is removed. Leaving water on the meat can prevent the marinade from penetrating well and might make the beef tough.
Step 4
Let’s prepare the other ingredients. We have 2kg of beef for bulgogi, 1 onion, 1 bunch of king oyster mushrooms, and 1 stalk of green onion. These can be added while stir-frying or at the very end to maintain a fresh texture.

Place the drained beef in a mixing bowl. Add all the prepared marinade ingredients and mix well. It’s important to ensure the marinade coats the beef evenly.

This bulgogi is perfectly balanced – sweet and savory! Gently massaging the marinade into the meat helps it absorb the flavors deeply, enhancing the overall taste.

Here’s the golden ratio for our delicious marinade: Combine 1/2 cup soy sauce, 1/2 cup mirin, 3 Tbsp sugar, 1 Tbsp minced garlic, 1 Tbsp sesame oil, and a pinch of black pepper. Mix thoroughly to create the flavorful marinade.

While you can cook the marinated beef right away, letting it rest in the refrigerator for about 30 minutes allows the flavors to meld and deepen even further, resulting in a richer taste. If you have time, this marinating step is highly recommended!

Now it’s time to cook! The king oyster mushrooms and green onions can become soft if cooked for too long. Depending on your preference, you can add them during the stir-frying process or right at the end to keep them slightly crisp.

Heat a pan over medium-high heat. Add the marinated beef and begin to stir-fry. The sizzling sound as the meat cooks will be music to your ears!

Stir-frying for about 10 minutes is usually enough to cook the beef perfectly. The delicious aroma filling your kitchen is truly satisfying! Give it a final flip for that perfect finish.
