Main Ingredients- 600g Pork ribs
- 1/2 Onion
- 1 Green onion (scallion)
Soy Sauce Marinade Ingredients (Measurements: Tablespoons)- 2 Tbsp Sugar
- 1 Tbsp Vinegar
- 6 Tbsp Soy sauce
- 1 Tbsp Oyster sauce
- 1 Tbsp Plum extract (or syrup)
- 2 Tbsp Corn syrup (or grain syrup)
- 1 Tbsp Minced garlic
- 600ml Water
- 2 Tbsp Sugar
- 1 Tbsp Vinegar
- 6 Tbsp Soy sauce
- 1 Tbsp Oyster sauce
- 1 Tbsp Plum extract (or syrup)
- 2 Tbsp Corn syrup (or grain syrup)
- 1 Tbsp Minced garlic
- 600ml Water
Cooking Instructions
Step 1
If your pork ribs are frozen, transfer them to the refrigerator the day before to thaw naturally. Once thawed, soak them in cold water for about 20 minutes to remove any blood. Thoroughly removing the blood ensures a clean taste without any gamey odor.
Step 2
Chop the half onion into thick slices. Cutting them thickly helps them maintain their shape as they cook and adds sweetness.
Step 3
Chop the green onion into large pieces. The fragrant aroma of the green onion will deepen the flavor of the braised ribs.
Step 4
Heat a pan and sear the pork ribs, starting with the fatty (skin) side, until golden brown. This renders the fat and enhances the rib’s flavor. Once browned, sprinkle in 2 tablespoons of sugar and coat the ribs evenly to create a sugar glaze. This step gives the ribs a glossy finish and a sweet coating.
Step 5
Add 1 tablespoon of vinegar to the sugar-coated pork ribs. Vinegar helps to tenderize the meat and adds a subtle flavor.
Step 6
Pour in 6 tablespoons of soy sauce. This is the base of the marinade, providing a deep savory flavor.
Step 7
Add 1 tablespoon of plum extract. Plum extract helps to remove any gamey odors and adds a mild sweetness.
Step 8
Add 1 tablespoon of oyster sauce. Oyster sauce enhances the umami, elevating the overall taste of the marinade.
Step 9
Add 2 tablespoons of corn syrup or grain syrup. This adds shine and contributes to a tender texture. Using grain syrup can provide a slightly healthier sweetness.
Step 10
Add 1 tablespoon of minced garlic. Garlic is an essential ingredient for bringing out the rich flavors of braised pork.
Step 11
Add the prepared onion and green onion, then pour in 600ml of water and bring to a rolling boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer gently until the sauce thickens and the flavors have penetrated the ribs. Stir occasionally to prevent sticking.
Step 12
When the sauce has reduced and the ribs are tender, your delicious soy braised pork ribs are complete! Serve over warm rice for a delightful meal.
