  • 1 pack (280g) semi-dried octopus for stir-fry
  • 1 Tbsp mayonnaise

First, heat a frying pan over medium heat. Add a moderate amount of canola oil and let the pan get sufficiently hot. Be careful not to use too much oil, as it can make the dish greasy.

Semi-dried octopus is usually pre-cleaned, but it’s good to double-check its condition just in case. I used it directly without washing. It’s recommended to taste a small piece of the octopus first to check its dryness and saltiness. The octopus I used was a bit bland, so I added extra seasoning. Once the pan is hot, add the octopus. At this stage, also add 1 tablespoon of mayonnaise. Mayonnaise helps tenderize the octopus and adds a nice flavor. Stir-fry the octopus until it’s lightly golden brown.

Now it’s time to add the seasoning ingredients. Pour 2 tablespoons of soy sauce and 3 tablespoons of oligodang into the pan. If the octopus is not salty enough, you can add about 1 more tablespoon of soy sauce. You can use corn syrup or sugar instead of oligodang, but oligodang provides a nice sheen and sweetness. Stir-fry while mixing to ensure the sauce coats the octopus evenly. Finally, sprinkle generously with sesame seeds and quickly stir-fry until the sauce thickens slightly. Be careful not to overcook, as the octopus can become tough. Let the finished stir-fry cool slightly before packing it into your lunchbox.
