Main Ingredients- 1 head of Enoki mushrooms
- 2 Cheongyang peppers (optional, adjust for spice preference)
Savory Soy Glaze- 3 Tbsp Soy sauce (or seasoned soy sauce)
- 1 Tbsp Sugar (adjust to taste)
- 2 Tbsp Water
- 1 Tbsp Vinegar (adds a nice tang and depth)
- 1 Tbsp Sesame seeds (for nutty flavor)

Cooking Instructions
Step 1
Begin by preparing the enoki mushrooms. Trim off the root end of the mushroom head with a knife. Then, rinse them gently under cool running water. Trimming the root helps the mushroom strands separate more easily, allowing the sauce to coat them evenly.
Step 2
Without drying the enoki mushrooms completely after rinsing, spread them out in a single layer in a non-stick skillet. Cover the pan with a lid and cook over medium-low heat. Allow the mushrooms to cook in their own released moisture until they become tender and most of the water has evaporated, which should take about 3-5 minutes.
Step 3
While the mushrooms are cooking, let’s make the delicious soy glaze. Finely mince the 2 Cheongyang peppers and place them in a small bowl. (If you prefer less spice or are cooking for children, you can omit or reduce the amount of peppers.) Add 3 tablespoons of soy sauce, 1 tablespoon of sugar, 2 tablespoons of water, 1 tablespoon of vinegar, and 1 tablespoon of sesame seeds to the bowl. Stir everything together with a spoon until the sugar is dissolved and the sauce is well combined. This creates a wonderfully flavorful glaze.
Step 4
Once the enoki mushrooms in the pan are tender, transfer them to a serving plate. Pour the prepared soy glaze evenly over the cooked mushrooms, ensuring they are well-coated.
