Main Ingredients- 300-350g Mini button mushrooms
- ½ stalk Green onion (scallion)
Seasoning- 2 Tbsp Olive oil
- 4 Tbsp Soy sauce
- 1-2 Tbsp Oligosaccharide (or corn syrup)
- 1 tsp Minced garlic
- A pinch of Sugar (optional)
- A little Sesame oil
- A little Toasted sesame seeds

Cooking Instructions
Step 1
First, gently rinse the mini button mushrooms under running water and then thoroughly pat them dry with paper towels. Removing excess moisture is key to preventing the mushrooms from releasing too much water during cooking, ensuring a better texture. Heat 2 tablespoons of olive oil in a pan over medium-low heat. Add the prepared mushrooms and stir-fry them for 2-3 minutes, making sure they don’t burn, until they are lightly golden brown on the surface.
Step 2
Once the mushrooms are lightly sautéed, add all the seasoning ingredients except for the sesame oil and sesame seeds: 4 tablespoons of soy sauce, 1-2 tablespoons of oligosaccharide, 1 teaspoon of minced garlic, and a pinch of sugar. Increase the heat to medium-high and gently stir to coat the mushrooms evenly with the sauce as it begins to thicken. Reduce the heat if the sauce starts to reduce too quickly to prevent burning.
Step 3
Wash the green onion and thinly slice it into bite-sized pieces, including both the white and green parts. Cutting it into thicker pieces will help retain its texture and flavor in the stir-fry. Once the sauce has started to thicken slightly, add the sliced green onions to the pan and mix well to combine.
Step 4
Now, continue to simmer over medium-high heat for about 7-8 minutes, allowing the sauce to fully penetrate the mushrooms and green onions. Once the sauce reaches your desired consistency, turn off the heat. Finally, drizzle in a little sesame oil and sprinkle generously with toasted sesame seeds for a fragrant finish. The nutty aroma of sesame oil and seeds will enhance the overall flavor.
