  • Soy sauce 7 Tbsp
  • Cooking wine (Mirin, etc.) 2 Tbsp
  • Granulated sugar 2 Tbsp
  • Oligosaccharide syrup 1.5 Tbsp
  • Minced garlic 1 Tbsp
  • Chopped green onion 1 Tbsp
  • Black pepper, a pinch

Cooking Instructions

Step 1

First, let’s prepare the delicious marinade. In a bowl, combine 7 tablespoons of soy sauce, 2 tablespoons of cooking wine, 2 tablespoons of granulated sugar, 1.5 tablespoons of oligosaccharide syrup, 1 tablespoon of minced garlic, 1 tablespoon of chopped green onion, and a pinch of black pepper. Mix everything well. (All measurements are based on a standard Korean dining spoon.) Add the 500g of pork neck to this marinade and toss to coat the meat evenly. Let it marinate for at least 30 minutes for a deeper flavor. Marinating it overnight in the refrigerator will yield even better results.

Now, let’s get grilling! Heat a pan over low heat, then place the marinated pork neck slices onto the hot pan. Cook them, turning occasionally, until they are nicely browned on both sides. Be sure to manage the heat to prevent burning.

Pork neck is quite thick, so cooking it over high heat can burn the outside while leaving the inside undercooked. It’s best to cook it slowly over medium-low heat for a longer time. If the heat is too high, the marinade can burn and turn bitter. Maintain a medium-low heat and cook until the meat is tender and develops a beautiful golden-brown color. You can check if it’s done by piercing it with a chopstick; if clear juices run out, it’s cooked through.
