- 5 Tbsp potato starch (or cornstarch)
- Pinch of salt
Soy Sauce Glaze- 3 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or corn syrup/honey)
- 1/2 Tbsp sugar
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic
- 5 Tbsp water
- 3 Tbsp soy sauce
- 1 Tbsp oligosaccharide (or corn syrup/honey)
- 1/2 Tbsp sugar
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic
- 5 Tbsp water
Cooking Instructions
Step 1
First, thoroughly pat the tofu dry with paper towels to remove as much moisture as possible. This is crucial for achieving a crispy texture and preventing oil splatters when frying. Then, cut the tofu into bite-sized cubes, about 2cm (approximately 3/4 inch) each. Lightly sprinkle salt over the cut tofu cubes to season them, which enhances the tofu’s natural flavor.
Step 2
Place the seasoned tofu cubes into the potato starch. Gently roll each piece to ensure it’s evenly coated on all sides. A good coating of starch is key to creating a crispy exterior that will hold the delicious glaze beautifully. Lightly shake off any excess starch.
Step 3
Now, let’s make the star of this dish – the soy sauce glaze! In a small saucepan or skillet, combine 3 Tbsp soy sauce, 1 Tbsp oligosaccharide, 1/2 Tbsp sugar, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, and 5 Tbsp water. Whisk these ingredients together until well combined. This mixture will be simmered to create a rich glaze.
Step 4
In a frying pan, pour enough cooking oil so that the tofu pieces are about half-submerged. Heat the oil over medium heat until it’s sufficiently hot. Carefully add the starch-coated tofu cubes to the hot oil. Fry them until they turn golden brown and crispy on all sides, turning them occasionally to ensure even cooking. This should take about 5-7 minutes.
Step 5
Once the tofu is golden and crispy, remove it from the oil and place it on a wire rack set over a plate or a layer of paper towels. This step allows excess oil to drain off, ensuring the tofu remains delightfully crisp and doesn’t become soggy.
Step 6
Pour the prepared soy sauce glaze into a clean skillet and bring it to a simmer over medium-low heat. Once the sauce begins to thicken slightly, add the drained, fried tofu cubes. Toss them quickly and gently to coat each piece evenly with the glaze. Continue to stir-fry for about 1-2 minutes until the sauce clings to the tofu and becomes glossy.
Step 7
As the glaze reduces and coats the tofu beautifully, your delicious Soy Sauce Tofu Gangjeong is ready! Serve it hot for the best texture, or allow it to cool slightly. For an extra touch, you can sprinkle toasted sesame seeds or chopped nuts on top before serving. Enjoy this delightful homemade Korean treat!
