Ingredients

  • 1 can corn kernels (drained thoroughly)
  • 1/2 cup pancake mix (buchim garu)
  • 30-40ml water
  • A little honey or condensed milk (optional)

Cooking Instructions

Step 1

First, prepare the star ingredient: 1 can of corn kernels. Drain the liquid from the can very thoroughly using a sieve. This is crucial to prevent the batter from becoming too watery. Have all other ingredients measured and ready.

Step 1

Step 2

Add 1/2 cup of pancake mix to the drained corn kernels. It’s best to add the pancake mix in two separate additions rather than all at once. Mix gently after each addition to ensure the corn and flour are evenly combined.

Step 2

Step 3

In between adding the pancake mix, gradually incorporate 30-40ml of water to achieve the right batter consistency. You’re looking for a slightly thick batter that holds the corn kernels together, not too runny or too stiff. If you’re using honey or condensed milk for extra sweetness, mix it in at this stage.

Step 3

Step 4

Now it’s time to cook the fritters. Heat a non-stick pan over medium-low heat. Add a generous amount of cooking oil; sufficient oil is key to achieving crispy fritters.

Step 4

Step 5

Once the pan is hot, ladle portions of the corn batter onto the hot oil, forming small pancakes. Use the back of a spoon or spatula to gently flatten the tops of the batter. This helps them cook evenly and gives them a nice shape.

Step 5

Step 6

Cook over medium-low heat for about 3-4 minutes, or until the bottom side is golden brown and slightly crispy. You’ll know it’s time to flip when the edges start to look cooked. Carefully flip the fritters with a spatula and cook the other side until it’s also golden brown and cooked through. Your delicious corn fritters are ready when both sides are a beautiful golden color!
