  • 2 Tbsp pumpkin seeds
  • 1 Tbsp pine nuts

First, wash the raw peanuts thoroughly under running water to remove any dirt or debris. Then, drain them well in a colander. This step helps to reduce any ‘green’ or raw flavor from the peanuts during the braising process.

If your pumpkin seeds and pine nuts have been stored in the freezer, they might have a slight odor. Spread them out on a plate and microwave them for about 30 seconds. This quick zap helps to eliminate any residual freezer smell, enhancing the nutty aroma of the final dish.

Place the washed raw peanuts in a pot and cover them with cold water. Bring the water to a boil. You’ll notice a reddish liquid forming. Discard this water, add fresh cold water again, and boil for another 10 minutes. Drain this second batch of water as well. Blanching the peanuts twice like this is key to removing any bitterness from the skins, resulting in a much more pleasant taste.

Now, let’s get to the braising! Add the blanched peanuts and 1 cup of water to a pot. Stir in 3 tablespoons of soy sauce and 4 tablespoons of corn syrup. Bring this mixture to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer until the liquid has reduced by about half. Then, lower the heat to low and continue to braise gently, stirring occasionally to prevent sticking.

As the peanuts start to develop a glossy sheen and the sauce thickens, add the pumpkin seeds. Continue to braise them together. Once the pumpkin seeds are cooked and have absorbed some of the sauce, add the pine nuts towards the end. Be careful not to overcook the pine nuts as they can break apart easily.
