Main Ingredients- 3 large potatoes (approx. 600g)
- 1 red chili pepper
- 1 green chili pepper (jalapeno or similar)
Cooking Instructions
Step 1
Peel the 3 large potatoes thoroughly. Cut them into slightly larger than bite-sized pieces; this helps them maintain their shape during the braising process and prevents them from breaking apart.
Step 2
Place the cut potatoes in a colander and rinse them under running water. This removes excess starch, leading to a cleaner taste and better sauce absorption. Drain them completely.
Step 3
Finely chop the red and green chili peppers into roughly 1cm pieces. If you enjoy a spicier kick, feel free to add more jalapenos or leave the seeds in. These also add a beautiful splash of color.
Step 4
In a pot with a lid, combine the soy sauce (2 Tbsp), olive oil (1 Tbsp), and water (300ml). Place the pot over medium heat and bring the mixture to a simmer to create the braising liquid base.
Step 5
Once the liquid is boiling, add the drained potatoes and sugar (1 Tbsp). Stir gently to coat the potatoes. Then, cover the pot with a lid, reduce the heat to medium-low, and let them braise for about 14-15 minutes, or until the potatoes are fork-tender and have absorbed the sauce. Stir occasionally to ensure even cooking and flavor distribution.
Step 6
When the potatoes are almost cooked through and most of the liquid has reduced, lower the heat to very low or briefly turn it off. Stir in the honey (1/2 Tbsp), chopped chili peppers, toasted sesame seeds (1/3 Tbsp), and black sesame seeds. Cover the pot again and let it steam on very low heat for 2-3 minutes. This allows the flavors to meld beautifully.
Step 7
Adjust to your taste! For a sweeter flavor, add a little more honey. If you prefer it saltier, you can add a touch more soy sauce. These potatoes are delicious served warm, but their chewy texture intensifies as they cool.
