Cooking Instructions
Step 1
The start of any great dish is quality ingredients! Today, we’re preparing our main star with the Cuckoo induction: about 10 fresh Korean pork back ribs. Don’t forget whole garlic cloves, whole peppercorns, and bay leaves for removing any gamey odor.
Step 2
It’s crucial to soak the pork ribs in cold running water for about 20 to 30 minutes to thoroughly remove the blood. This step is key to ensuring a clean flavor and eliminating any unpleasant smell.
Step 3
Introducing the sleek and modern Cuckoo White 3-Burner Induction! Now, let’s create a magical sweet and savory sauce with this fantastic appliance. Cooking will become even more enjoyable.
Step 4
Alright, it’s time to reveal the golden ratio for our irresistible sweet and savory sauce! Combine 3 tablespoons of Hunter Sauce (BBQ flavor), 3 tablespoons of Tonkatsu sauce, 2 tablespoons of soy sauce, 2 tablespoons of ketchup, 2 tablespoons of oligodang, 1 tablespoon of minced garlic, 2 tablespoons of sugar, and 2 tablespoons of cooking wine. Whisk everything together until well combined. You’ll have a richly flavored sauce ready to go!
Step 5
Place the blood-removed pork ribs neatly into a pot. Pour in enough water to generously cover the ribs.
Step 6
Eliminating odors during the boiling process is essential! Add the 7-10 whole garlic cloves, 1 tablespoon of whole peppercorns, and the bay leaves you prepared earlier to the pot. This will remove any gamey smell from the pork while imparting a subtle, pleasant aroma.
Step 7
Now, let’s start cooking using the Cuckoo induction. Cover the pot with a lid and bring it to a rolling boil over high heat (Induction level 9) for about 7 minutes. This high heat will quickly sear the surface of the ribs, locking in the juices.
Step 8
Once the water starts boiling vigorously, reduce the heat to medium-low (Induction level 5) and simmer for 10 minutes. Then, further reduce to low heat (Induction level 2) and cook for an additional 12 minutes. Cooking in stages like this ensures the ribs become tender all the way through.
Step 9
Carefully remove the well-cooked ribs from the pot using a colander and rinse them gently under cold running water. This helps to wash away any impurities from the boiling process, resulting in a cleaner taste.
Step 10
In the next step, use a knife to make shallow cuts between the meat of the cooked ribs. This will allow the sauce to penetrate deeper into the meat, making them even more flavorful.
Step 11
Add a generous amount of perilla oil to the pan. The nutty aroma of the perilla oil will beautifully complement the pork ribs, enhancing their overall flavor.
Step 12
Place the prepared ribs in the heated pan and sear them until they are golden brown on both sides. Browning the exterior until it reaches an appetizing color will further develop the rich flavors.
Step 13
Now for the magic! Pour 100ml of water (about 1/2 paper cup) and the pre-made sweet and savory sauce over the seared ribs, ensuring you don’t leave any behind. Using plenty of sauce will help coat the ribs evenly.
Step 14
Worried about any leftover sauce in the pan? Don’t be! Add another 100ml of water (about 1/2 paper cup) to the pan and scrape up all the delicious sauce stuck to the bottom, then add it to the pot with the ribs.
Step 15
Gently toss everything together once, then bring it to a simmer over medium heat (level 7) on the Cuckoo induction.
Step 16
Once the sauce begins to bubble, reduce the heat to medium-low (level 5). Now, let it simmer and thicken like a glaze, allowing the sauce to cling beautifully to the ribs.
Step 17
Finally, reduce the heat to low (level 2) and let it simmer until the sauce has deeply permeated the ribs and is thoroughly reduced. Your delicious Sweet & Savory Braised Pork Ribs, a perfect home party dish, are now complete! Enjoy them with a warm bowl of rice.
