Here’s a hearty braised pork ribs dish, prepared for special guests. This was a special dinner made for a friend who missed Korean food dearly after living abroad for a long time. Enjoy this comforting and flavorful meal.

Main Ingredients

  • Pork ribs 2.5kg

Vegetables & Aromatics

  • 3 potatoes (cut into large chunks)
  • 1 carrot (cut into large chunks)
  • 1/4 Korean radish (cut into large chunks)
  • 1 onion (sliced thickly)
  • 2 stalks green onions (cut into large pieces)
  • 3 button mushrooms (trim ends, cut into large pieces)
  • 3 chili peppers (sliced diagonally; adjust to spice preference)

Braising Sauce Ingredients

  • 2 cups soy sauce (approx. 400ml)
  • 1 cup sugar (approx. 200g; adjust to taste)
  • 1 cup cooking wine (mirin, etc.; approx. 200ml)
  • 3 cups water (approx. 600ml)
  • 1/2 cup minced garlic (approx. 100g)
  • 1 cup chopped green onions (for sauce; approx. 100g)
  • 1/2 tsp ground ginger (or 1 tsp minced fresh ginger)
  • 6 Tbsp sesame oil (approx. 90ml)

First, soak the pork ribs in cold water for at least 1 hour to remove excess blood. This is a crucial step for a cleaner taste and less gamey aroma. Changing the water a few times during soaking will yield even better results.

Prepare the vegetables by cutting the radish, carrot, and potatoes into large, bite-sized pieces. Cutting them large helps them hold their shape during cooking. Slice the onion thickly and cut the green onions into large sections.

Now, let’s make the delicious braising sauce! Combine all the sauce ingredients – soy sauce, sugar, cooking wine, water, minced garlic, chopped green onions, ground ginger, and sesame oil – in a bowl. Mix them thoroughly until well combined. This sauce mixture is versatile and can be used in other dishes too.

Rinse the pork ribs under running water after soaking to remove any remaining blood, then drain them thoroughly. Place the drained ribs, the prepared sauce, and the large chunks of radish into a pot. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for at least 1 hour until the ribs are tender. The radish will release its natural sweetness and moisture, contributing to a deep flavor.

Once the ribs are tender and cooked through, add the chunks of potato and carrot to the pot. These vegetables require a bit more cooking time, so they are added after the ribs have partially cooked.

Trim the stems off the button mushrooms and cut them into large pieces. Slice the chili peppers diagonally. Using Korean green chilies (cheongyang) will add a nice spicy kick, if desired.

Finally, add the sliced onion, mushrooms, and chili peppers to the pot and simmer until the vegetables are tender. Just before serving, add the large pieces of green onion and cook for a very short time until they are just wilted but still vibrant. This adds a fresh aroma and a slight crispness.
