Today, we’re making something that tastes similar to Jjimdak (braised chicken) but is much simpler to prepare. Delicious chicken wingettes meet sweet potatoes, all simmered in a savory soy sauce glaze. This dish is perfect as a drinking snack or for kids’ snacks. Let’s make it together with the video! Main Ingredients- 500g Chicken wingettes (or drumettes)
- 2 medium Sweet potatoes
- A pinch of Peperoncino (or 1 dried chili pepper)
- 1 stalk Green onion
- Milk (for removing odor)
Chicken Marination Ingredients- 2 Tbsp Mirin (or rice wine, soju)
- 1/2 Tbsp Minced garlic
- A little Ginger juice (or ginger powder)
- A pinch of Black pepper
Sauce Ingredients- 6 Tbsp Water
- 4 Tbsp Soy sauce
- 3 Tbsp Oligosaccharide (or other syrup, adjust to taste)
- 1 Tbsp Cooking wine (like mirin or sake)
- A little Ginger juice (or ginger powder)
- A little Sesame oil
- A little Sesame seeds
- 2 Tbsp Mirin (or rice wine, soju)

Cooking Instructions
Step 1
First, let’s prepare all the ingredients. You can use other chicken parts like breast meat if wingettes aren’t available. If you don’t have peperoncino, you can substitute with one dried chili pepper. If ginger juice is unavailable, ginger powder works perfectly fine.
Step 2
Place the chicken wingettes in a bowl and pour enough milk to cover them. Let it soak for about 20 minutes to remove any gamey odor.
Step 3
While the chicken is soaking, rinse the chicken thoroughly under running cold water several times. This step is crucial for a cleaner taste.

Drain the chicken and place it back in the bowl. Add the marination ingredients: 2 Tbsp mirin (or rice wine/soju), 1/2 Tbsp minced garlic, a little ginger juice (or powder), and a pinch of black pepper. Mix well by hand to ensure the chicken is evenly coated. Let it marinate for about 30 minutes.
Step 5
Now, let’s prepare the sweet potatoes and green onion. Peel the sweet potatoes using a vegetable peeler and cut them into bite-sized chunks, similar in size to the chicken pieces. Cut the green onion into about 3cm lengths.

Let’s make the delicious braising sauce! In a separate bowl, combine 6 Tbsp water, 4 Tbsp soy sauce, 3 Tbsp oligosaccharide (adjust sweetness to your liking), 1 Tbsp cooking wine, a little ginger juice (or powder), a little sesame oil, and a little sesame seeds. Whisk everything together until well combined.
Step 7
In a pot or deep pan, add the marinated chicken wingettes and the cut sweet potatoes. Add just enough water to mostly cover the sweet potatoes. Bring to a simmer over medium heat and cook for about 15 minutes.

While the chicken is cooking, check if the sweet potatoes are tender by piercing them with a skewer or fork. They should be easily pierced and soft.

Once the sweet potatoes are fully cooked, turn off the heat temporarily. Carefully drain all the cooking liquid from the pot, leaving the chicken and sweet potatoes behind. Discard the liquid, as it can make the final sauce cloudy.

Pour the prepared sauce into the pot with the chicken and sweet potatoes. Add the peperoncino (or chopped dried chili) and the green onion. Turn the heat back on to medium-low. Stir continuously, making sure to scrape the bottom, until the sauce thickens and coats the ingredients beautifully.
