Main Ingredients- 25 baby potatoes (small, bite-sized)
- 1 Cheongyang chili pepper (or jalapeño)
- 1 red chili pepper (or red bell pepper for less heat)
- 1 Tbsp toasted sesame seeds
- 2 Tbsp vinegar (for boiling the potatoes)
Braising Sauce- 3 Tbsp soy sauce
- 3 Tbsp mirin (or rice wine)
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp cooking oil

Cooking Instructions
Step 1
First, wash the baby potatoes thoroughly under running water. Place the washed potatoes in a pot with enough water to cover them, and add 2 tablespoons of vinegar. The vinegar helps to sterilize the potato skins and also removes any astringent taste, resulting in a cleaner flavor. Boil the potatoes for about 15-20 minutes until they are tender all the way through. You can check for doneness by piercing them with a chopstick; it should go in easily. Once cooked, drain the potatoes in a colander and let them cool slightly.
Step 2
In a bowl, combine 3 tablespoons of soy sauce, 3 tablespoons of mirin, 1 tablespoon of sugar, 1 tablespoon of corn syrup, and 1 tablespoon of cooking oil. Whisk everything together to create the braising sauce. (Spoon measurements are based on standard adult tablespoons.)

Pour the prepared braising sauce into a deep pan or pot and bring it to a simmer over medium heat. Once the sauce starts to bubble, add the boiled baby potatoes. Gently stir the potatoes with a spatula to ensure they are evenly coated with the sauce. Reduce the heat to low and let the potatoes simmer gently, allowing them to absorb the flavorful sauce and become glossy. Stir occasionally to prevent sticking and burning.
Step 4
When the potatoes have reached your desired tenderness and the sauce has thickened slightly, add the chopped Cheongyang chili pepper and red chili pepper.
