Bingsu Ingredients

  • 1/2 Musk melon
  • 200ml Milk (approx. 1 paper cup)
  • 170g Plain Yogurt (2 x 85g containers)
  • 2-3 Tbsp Sweetened Condensed Milk

For Melon Cleaning

  • 2 Tbsp Baking Soda

Cooking Instructions

Step 1

Let’s begin by preparing for a delicious melon bingsu. Gather your zip-top bag, milk, plain yogurt, and condensed milk to freeze the ice for the bingsu.

In the zip-top bag, combine approximately 200ml of milk (about 1 paper cup), two 85g containers of plain yogurt (total 170g), and 2-3 tablespoons of sweetened condensed milk, adjusting to your preferred sweetness. Mix gently until well combined.

Flatten the zip-top bag to make it easy to freeze. Laying it flat will help when you process the ice later. Place it in the freezer and freeze for at least 4-6 hours, or until completely solid.

Now, it’s time to clean the melon thoroughly. Sprinkle about 2 tablespoons of baking soda evenly over the melon’s surface. Gently rub the rind with your hands. Baking soda helps to remove impurities.

After rubbing the melon with baking soda, rinse it thoroughly under running water to wash away any residue. Rinse gently to avoid damaging the rind.

Using a spoon, gently scoop out the seeds and the soft pulp from the center of each melon half. Make sure the inside is clean to comfortably hold the bingsu.

Take out the frozen milk and yogurt ice from the freezer. Break the ice block into smaller pieces using the back of a knife or a rolling pin. Then, use the rolling pin to crush and flatten it into fluffy bingsu ice. (If using a bingsu machine, follow its instructions.)
