Main Ingredients- 500g dried red beans
- 1L water
- 2/3 cup glutinous rice flour
Seasoning- 5 Tbsp sugar (adjust to taste)
- 1 tsp salt (adjust to taste)
- 5 Tbsp sugar (adjust to taste)
- 1 tsp salt (adjust to taste)
Cooking Instructions
Step 1
The first step to making your delicious Danpatjuk: Rinse 500g of dried red beans thoroughly and soak them in plenty of water overnight. This soaking process helps soften the beans and remove impurities.
Step 2
Place the soaked red beans in a pot and add 1L of fresh water. Bring to a rolling boil over high heat for 15-20 minutes. Discard this first boiling water. This step is crucial for removing any bitterness from the beans and achieving a cleaner taste. Boiling for longer than 20 minutes might make the beans too mushy, so keep an eye on the time.
Step 3
After discarding the first water, lightly rinse the beans with cold water. Return the beans to the pot and add another 1L of fresh water. This is where the main cooking of the red bean porridge begins.
Step 4
Once the water comes to a boil again, reduce the heat to medium and simmer for 30 minutes. Cook the beans until they are completely tender. They should be easily mashable with a fork.
Step 5
Use an immersion blender (hand blender) to purée the cooked red beans until smooth. You can also use a regular blender. When using a blender, add the 2/3 cup of glutinous rice flour at this stage to help thicken the porridge and give it a smoother consistency. Blend until there are no large bean chunks remaining.
Step 6
After blending the beans and glutinous rice flour together, return the mixture to the pot and stir well as it simmers. (If you don’t have glutinous rice flour, you can use a small amount of another sticky grain flour. This recipe uses black glutinous rice flour.)
Step 7
Add 5 Tbsp of sugar and 1 tsp of salt to the puréed red bean mixture and stir until well combined. You can adjust the amount of sugar and salt to your personal preference. Let it simmer for a few more minutes until the flavors meld together, and your delicious Danpatjuk is ready!
Step 8
For an extra delightful treat, you can make and add chewy glutinous rice dumplings (ongsimi). Alternatively, enjoy the porridge as is; it’s wonderfully sweet and satisfying on its own. Enjoy your homemade Danpatjuk!
