This is an incredibly simple dish, made by just simmering chili beans, Spam, and plenty of fresh vegetables, but its flavor is truly exceptional. This time, I’ve added a generous amount of sweet pumpkin, making it even richer and more flavorful. It’s a satisfying meal when served over a bowl of rice.

  • Spam 200g
  • Baked Beans 180g (can)
  • Tomato Sauce 200g
  • Mini Kabocha Squash 400g
  • Mini King Oyster Mushrooms 110g
  • Bell Pepper 1/2
  • Onion 1/2
  • Butter 1 Tbsp

Seasonings & Others

  • Grated Parmesan Cheese 2 Tbsp
  • Taco Seasoning 1 Tbsp
  • Minced Garlic 2 Tbsp

Cooking Instructions

Step 1

Cut the mini kabocha squash in half, scoop out the seeds, and wash it thoroughly. Also, wash the mini king oyster mushrooms and bell pepper under running water.

Dice all the prepared ingredients – kabocha squash, Spam, mini king oyster mushrooms, bell pepper, and onion – into bite-sized cubes. It’s best to cut the kabocha squash into slightly larger pieces to prevent it from breaking down too much during cooking.

Melt 1 Tbsp of butter in a pan over medium heat. Add 2 Tbsp of minced garlic and sauté until fragrant. Be careful not to burn the garlic; gently sautéing is key.

Add the diced kabocha squash, Spam, onion, and bell pepper to the sautéed garlic in order. Stir-fry together until the onions become translucent. Make sure to stir to combine the ingredients evenly.
