- 280g well-fermented kimchi
- 160g smoked duck meat
- A little cooking oil
- 1 tsp sugar
- 1 tsp perilla oil
- A pinch of black pepper
Cooking Instructions
Step 1
First, prepare the Gawai No. 1 rice, which is known for its excellent texture that makes it ideal for bibimbap.
Step 2
Wash the pumpkin thoroughly, remove the skin and seeds, and then cut it into bite-sized pieces. The sweetness of the pumpkin will add a wonderful dimension to the bibimbap.
Step 3
Rinse the rice in running water about three to four times to remove any impurities. Drain the rice in a sieve. Thoroughly rinsing the rice is the first step to achieving fluffy grains.
Step 4
Place the rinsed rice and the cut pumpkin into an electric pressure cooker. Add 1 cup of water and 2 pinches of fine salt to lightly season the rice. Then, select the ‘white rice’ setting and cook the rice.
Step 5
Slice the smoked duck meat into thin strips. Finely chop the well-fermented kimchi and lightly squeeze out any excess moisture. In a bowl, combine the chopped kimchi with 1 tsp sugar, 1 tsp perilla oil, and a pinch of black pepper, mixing well. This seasoning will enhance the kimchi’s flavor when stir-fried.
Step 6
Heat a pan over medium heat and add a little cooking oil. Add the sliced smoked duck and stir-fry for about 1 to 2 minutes until it releases its savory aroma.
Step 7
Once the duck is partially cooked, add the seasoned kimchi to the pan. Continue to stir-fry for another 2 to 3 minutes until the kimchi softens and the ingredients are well combined. Stir-frying the kimchi and duck together deeply develops their flavors.
Step 8
When the rice is cooked, carefully remove the rice and pumpkin from the cooker. Check if the rice is fluffy. Gently mash the pumpkin with the back of your spoon while mixing it with the rice. Ensure the pumpkin’s sweetness is evenly distributed throughout the rice.
Step 9
Arrange the stir-fried smoked duck and kimchi mixture over the rice mixed with mashed pumpkin. Season with salt to taste, then sprinkle with toasted walnut powder, toasted sesame seeds, and drizzle with sesame oil to enhance the aroma and flavor. Gently mix everything together to create the bibimbap base.
Step 10
Now, prepare the crowning glory of the bibimbap: a fried egg. Lightly grease a pan with cooking oil, crack the eggs into the pan, and fry them to your desired doneness. Sprinkle the fried egg with minced cheongyang pepper for a touch of spice and a pinch of salt for seasoning.
Step 11
Serve the bibimbap in a nice bowl, placing the beautifully fried egg in the center. Your delicious Sweet Pumpkin Smoked Duck Kimchi Bibimbap is now ready to be enjoyed! Bon appétit!
