Main Ingredients- 1.5 cups high-quality rice
- 1/2 ripe pumpkin
- A handful of walnuts
- A few jujubes (dates)
- A bit of mushrooms (e.g., shiitake, oyster)
- A small amount of carrot

Cooking Instructions
Step 1
Start by rinsing the rice thoroughly. Place the rice in a sieve and gently rub it with your hands 2-3 times under running water. Drain well.
Step 2
Nowadays, you can use a rice washer or whisk to clean the rice without damaging the grains. After rinsing, let the rice sit for about 15 minutes without soaking it in water. This will result in perfectly cooked, fluffy rice.
Step 3
Wash the pumpkin. Microwave it for about 1 minute to make it easier to cut. Slice it in half, scoop out the seeds, and then cut it into bite-sized pieces. (If using organic pumpkin, you can leave the skin on).
Step 4
Prepare the additional ingredients for the nutritious rice. Break the walnuts into bite-sized pieces. Pit the jujubes by making a circular cut around the seed and then slice them. Slice the carrot into decorative shapes, like flowers, for an appealing presentation. Prepare your mushrooms, such as shiitake or oyster mushrooms, by cutting them into manageable pieces. (Feel free to add pine nuts or ginkgo nuts for extra flavor and texture).

Add the prepared rice to your pot. Pour in an equal amount of water as rice and bring it to a boil over high heat.

Once the water starts to vigorously boil, immediately turn off the heat. (Be careful not to let the water boil over).

Arrange the prepared pumpkin pieces evenly over the rice in the pot. Cover with the lid and let it steam over very low heat for about 5 minutes, allowing the pumpkin to soften.

After 5 minutes, add the mushrooms, jujubes, carrots, and walnuts on top of the rice. Cover again and let it steam on low heat for another 3 minutes. (If you enjoy a crispy bottom layer, you can continue to cook until the water is mostly absorbed and you smell a toasty aroma).

Prepare the delicious seasoning sauce. Finely chop the red chili pepper, green chili pepper (optional), water parsley, and green onions. In a small bowl, mix soy sauce, ‘tsuyu’ (or dark soy sauce), and water in a 1:1:1 ratio. Add the chopped vegetables to create a flavorful sauce.
