Create a nutritious and flavorful rice dish featuring the sweet and savory taste of pumpkin, cooked in a stylish mini stainless steel pot! Mixed with glutinous rice and black rice, it offers a chewy and healthy texture, making it a perfect alternative to sticky rice or five-grain rice for the Lunar New Year. Ingredients- 2 cups short-grain white rice
- 5 Tbsp glutinous rice
- 2 Tbsp black rice
- 100g boiled and mashed pumpkin (or peeled and sliced)
- 5 peeled chestnuts
- 5 pitted red dates
Cooking Instructions
Step 1
First, meticulously prepare all the necessary ingredients before cooking the rice. Slice the peeled chestnuts into bite-sized pieces and get the pitted red dates ready. If you’re using pre-cooked pumpkin, peel and cut it into suitable sizes. (Tip: You can use mashed cooked pumpkin or large chunks cooked together with the rice.)
Step 2
In a bowl, combine 2 cups of short-grain white rice with 5 tablespoons of glutinous rice and 2 tablespoons of black rice. Rinse these grains thoroughly under running water until clean. Then, soak them in plenty of water for about 30 minutes to allow them to swell. Drain the soaked rice well and transfer it into your mini stainless steel pot. Arrange the sliced chestnuts and red dates on top of the rice. Add water, using slightly less than you would for regular rice. (Tip: Glutinous rice and black rice add chewiness and a nutty flavor to the rice.)
Step 3
Cover the pot with its lid and start cooking the rice over high heat. Once the water begins to boil vigorously, reduce the heat to medium-low and continue to cook for approximately 10 more minutes. After the rice is partially cooked, add the prepared pumpkin and re-cover the pot. Let it steam for about 10 minutes. This process will result in a perfectly cooked, sweet, and nutritious pumpkin rice.
