Introducing the ‘Sumine’s Kitchen’ Grandfather Special Sweet Pumpkin Crab Stew, made with fresh, in-season crabs and wonderfully sweet pumpkin. This hearty and flavorful stew is perfect for a comforting meal and is sure to be a hit with the whole family.
Main Ingredients- 1 Broth Pack (anchovy, kelp, etc.)
- 1/2 Small Sweet Pumpkin
- 1/4 Korean Radish
- 2 Fresh Crabs
- 1/3 Onion
- 1 Green Onion
- 2 Green Chili Peppers
- 1/2 Red Chili Pepper
- A handful of Water Parsley (Minari)
Cooking Instructions
Step 1
Gently wash the fresh crabs under running water. Use a small brush to clean any debris from between the shells, then lift the carapace and carefully remove the gills. Cut the crabs into manageable, bite-sized pieces. You can soak the prepared crabs in cold water for a moment to enhance their fresh appearance.
Step 2
Peel and remove the seeds from the sweet pumpkin, then cut it into large chunks. Dice the Korean radish into pieces similar in size to the pumpkin. Slice the onion thinly, and cut the green and red chili peppers diagonally for color. Chop the green onion finely for aroma. Wash the water parsley and cut it into 5cm lengths, ready to be added at the end.
Step 3
Pour 1 liter of water into a pot to create a clear broth. Add the broth pack and bring to a boil. Once the broth has infused, remove the broth pack. Add the large chunks of sweet pumpkin and Korean radish to the pot. Stir in 2 tablespoons of doenjang (soybean paste) to add a savory depth, and let it simmer until the broth becomes clear.
Step 4
As the broth comes to a boil, carefully add the prepared crabs. To eliminate any fishy odors and add a touch of spiciness, incorporate 2 teaspoons of gochugaru (red pepper powder) and 1 tablespoon of minced garlic. Cook over high heat for a short time to preserve the fresh flavor of the crab.
Step 5
Once the crabs are partially cooked, add the remaining vegetables: sliced onion, chopped green onion, and chili peppers. Simmer for a little longer until everything is tender. Taste the broth and adjust seasoning with salt if needed. Finally, add a generous amount of fresh water parsley and cook just briefly before turning off the heat.
