Today, we’re making an Onion Gratin, inspired by the movie , filled with sweet potatoes! This dish features sweet, caramelized onions baked with a creamy sweet potato filling and topped with melted, gooey cheese. It’s a comforting and delightful dish perfect for a cozy meal.
Ingredients
- 2 large onions
- 1 medium sweet potato (approx. 150g)
- Generous amount of mozzarella or cheddar cheese
- Pinch of salt
- Pinch of black pepper
- 1-2 Tbsp mayonnaise
- Pinch of dried parsley flakes (for garnish)
Cooking Instructions
Step 1
First, wash the onions thoroughly. Trim off the top and bottom ends. Make cuts about two-thirds of the way down from the root end, preparing to hollow out the center. Using a spoon or a small knife, carefully scoop out the inner core of the onion to create a cavity. Be careful not to break the onion apart. Place the hollowed-out onions in a steamer and steam for about 10 minutes until they are slightly softened.
Step 2
Wash the sweet potato peel clean. Place it in a steamer over boiling water and steam for about 20 minutes until it’s completely tender. You can check for doneness by inserting a chopstick; it should go in easily. Once cooked, remove from heat, let it cool slightly, then peel off the skin. While still warm, mash the sweet potato thoroughly with a fork or potato masher until smooth. Set aside.
Step 3
In a bowl with the mashed sweet potato, add a pinch of salt, a pinch of black pepper, 1-2 tablespoons of mayonnaise, and a pinch of dried parsley flakes. Mix everything together well until evenly combined. Adjust the amount of mayonnaise based on how dry the sweet potato mash is; you want it to be creamy and moist.
Step 4
Carefully spoon the prepared sweet potato mixture into the hollowed-out portion of each steamed onion. Press down gently to fill the cavities completely, ensuring the filling stays put. Fill each onion generously with the sweet potato mixture.
Step 5
Top the filled onions with a generous layer of mozzarella or cheddar cheese. The cheese will melt and bind everything together. Sprinkle a little more dried parsley flakes on top for garnish. Line a baking sheet with parchment paper and place the stuffed onions on it. Bake in a preheated oven at 180°C (350°F) for about 15-25 minutes, or until the cheese is golden brown and bubbly, and the onions are fully tender. Your delicious Onion Gratin is ready to be enjoyed!
