Hello everyone! This is Kim Jin-ok. About 13 years ago, I introduced a potato julienne pizza on my blog, and it received so many wonderful reviews from people who enjoyed it. I suspect this sweet potato julienne pizza I’m sharing today might be even more delicious! My daughter, who is 25 and diligently dieting, has been eating a lot of sweet potatoes lately. To cater to her healthy eating, I decided to make a pizza using julienned sweet potatoes, similar to the potato version. She absolutely loved it, saying, ‘It’s so delicious! I have to make this using your recipe later!’ As a cook, there’s no greater joy than hearing praise from those who eat your food! I hope you all enjoy this delightful sweet potato julienne pizza.

First, peel the 2 sweet potatoes and julienne them thinly using a mandoline or grater. Soak the julienned sweet potatoes in cold water for about 10 minutes to remove excess starch. This step is crucial for a crispier and cleaner pizza.

Finely julienne 1/4 onion, 1/2 bell pepper, and 50g ham to a similar thickness as the sweet potatoes. Cutting them to a similar size ensures they cook evenly when stir-fried.

Lightly grease a pan with cooking oil and heat it over medium heat. Add the julienned onion and stir-fry until it becomes slightly translucent. This process brings out the onion’s sweetness and prevents excess moisture from being released when cooked with other vegetables.

Drain the julienned sweet potatoes thoroughly in a colander; any remaining water can make the mixture too wet. Transfer the drained sweet potato juliennes to a bowl. Add 1/2 Tbsp curry powder for a hint of spice and aroma. Next, add 1 to 2 Tbsp of pancake mix (adjust the amount depending on how moist the sweet potatoes are) and crack in 1 egg. Mix everything together until well combined. The mixture might seem a little stiff, and that’s okay.

Now it’s time to cook the pizza. Lightly grease a non-stick pan with cooking oil and heat it over low heat. Spread the sweet potato mixture thinly and evenly in the heated pan. Once one side is golden brown and cooked, place a large plate upside down over the pizza and carefully flip the pan so the pizza lands on the plate. Then, gently slide the uncooked side of the pizza back into the pan. Turn off the heat for the next step.

On the sweet potato base now in the pan, spread a thin layer of tomato sauce. Arrange the stir-fried onion, bell pepper, and ham evenly over the sauce. Generously sprinkle pizza cheese on top. You can add a pinch of dried parsley for extra flavor, but it’s optional. Finally, cover the pan with a lid and cook over very low heat (just barely on, almost off) until the cheese is completely melted and bubbly. Your delicious sweet potato julienne pizza is ready!
