Today, I’m sharing a recipe for sweet potato financiers packed with creamy sweet potato mousse! These are perfect for a delightful treat.
Financier Batter Ingredients- 75g unsalted butter
- 60g egg whites
- 60g granulated sugar
- 8g honey
- A little vanilla extract
- 35g almond flour
- 25g cake flour
- 1.5g ground cinnamon

Cooking Instructions
Step 1
Start by placing 75g of unsalted butter into a saucepan or pan. This butter is key to the financier’s rich, nutty flavor.
Step 2
Melt the butter over medium-low heat. Once the bubbling sound subsides, turn off the heat and let the butter cool slightly. Watch carefully to avoid burning; you want a clear, slightly browned butter (beurre noisette).
Step 3
In a clean bowl, add 60g of fresh egg whites. Lightly whisk them with a fork or whisk until just blended. Avoid creating too much foam.
Step 4
Add 60g of granulated sugar to the egg whites. Stir until the sugar is dissolved into the whites.

Incorporate 8g of honey. Honey adds a subtle sweetness and helps keep the financiers moist.
