Ingredients

  • 2 medium-sized boiled sweet potatoes
  • 1 fresh egg
  • 1 slice of cheddar cheese
  • A splash of milk (to adjust consistency)
  • Pinch of salt (to taste)
  • Pinch of black pepper (optional)
  • 1/2 handful of mixed nuts (your choice)

Cooking Instructions

Step 1

Peel the skin off the warm, boiled sweet potatoes.

Step 1

Step 2

Mash the peeled sweet potatoes until smooth and lump-free using a fork or a masher. Ensure there are no large chunks for a consistent texture.

Step 2

Step 3

Gradually add milk to the mashed sweet potatoes and mix until you achieve a creamy, moist consistency. It should be spreadable but not too watery.

Step 3

Step 4

Add about half a handful of your favorite mixed nuts to the sweet potato mixture and blend thoroughly. The nuts will add a delightful crunch and nutty flavor.

Step 4

Step 5

Prepare a microwave-safe dish. Fill about two-thirds of the dish with the sweet potato mixture. Create a small well or indentation in the center. Carefully crack one fresh egg into this well.

Step 5

Step 6

Place a slice of cheddar cheese over the egg. The cheese will melt beautifully, enveloping the sweet potato and egg. If desired, sprinkle a pinch of salt and black pepper over the egg yolk. Black pepper is optional.

Step 6

Step 7

To prevent the egg yolk from bursting during microwaving, gently prick it 2-3 times with a toothpick. This helps it cook evenly without rupturing.

Step 7

Step 8

Cover the dish with plastic wrap and poke 3-4 small holes in the wrap with a toothpick to allow steam to escape. Microwave for 3-4 minutes. If you prefer your egg yolk fully cooked (hard-cooked), extend the microwaving time accordingly.

Step 8

Step 9

Carefully remove the dish from the microwave once done and peel off the plastic wrap. Enjoy your warm and delicious Sweet Potato Egg “Slut” immediately. It makes a satisfying snack or a light meal!
