Pizza Base & Filling Ingredients
- 2 medium sweet potatoes
- 1 sheet of rice paper
- 1 Tbsp butter
- 1 large egg
- 60g mozzarella cheese (or your favorite cheese)
Cooking Instructions
Step 1
First, prepare the sweet potatoes that will form the base of your pizza. Wash them thoroughly and cut each one in half. Since we’ll be cooking them with the skin on, a good wash is essential.
Step 2
Arrange the halved sweet potatoes in a steamer basket. Spacing them out slightly will help them cook more evenly.
Step 3
Steam the sweet potatoes for about 20 minutes, or until they are tender enough to be easily pierced with a fork. Cooking time may vary depending on the size of your sweet potatoes, so check them periodically.
Step 4
Once the sweet potatoes are well-steamed, let them cool slightly before carefully peeling off the skin. It’s safer to handle them when they are not piping hot.
Step 5
Place the peeled sweet potatoes into a large bowl. It’s time to mash them to create the pizza filling.
Step 6
Using a masher or a fork, mash the sweet potatoes until they are smooth and free of lumps. Mashing them while they are still warm will make the process easier.
Step 7
Briefly dip the rice paper in water until it becomes pliable, then lay it flat. Spread the mashed sweet potato thinly and evenly over the rice paper, leaving a small border around the edges to form your pizza base.
Step 8
Heat a non-stick pan over low heat and melt the butter. Once melted, crack the egg into the pan. Gently break the yolk and spread it out slightly. Proceed to the next step before the egg is fully cooked.
Step 9
Carefully place the rice paper with the sweet potato topping onto the pan, so that the sweet potato side faces down onto the cooked egg. Keep the heat low to prevent the rice paper from sticking or burning.
Step 10
As the sweet potato side begins to cook, sprinkle a generous amount of mozzarella cheese over the rice paper side (the top). Feel free to add more cheese if you love it!
Step 11
Gently fold the pizza in half, bringing the cheese-covered side over towards the sweet potato side, creating a half-moon shape. This creates a double layer that will become nicely crisp when cooked.
Step 12
Continue cooking over low heat, flipping occasionally, until the cheese is fully melted and both sides of the pizza are golden brown and crispy. Your delicious sweet potato and egg pizza is ready to be enjoyed!
