Ingredients- 1 Tortilla (choose your favorite type)
- 1/3 Sweet Potato (skin on)
- 3 Fresh Eggs
- 1/3 Ripe Tomato
- A handful of fresh Spinach
- Salt to taste
- Freshly ground Black Pepper to taste
- 2/3 cup Shredded Mozzarella Cheese
- Parsley flakes (optional, for garnish)
Cooking Instructions
Step 1
First, wash the sweet potato thoroughly under running water without peeling it. Then, use a mandoline slicer or a sharp knife to slice it as thinly as possible. Soak the sliced sweet potato in cold water for a moment to remove excess starch, then pat it completely dry with paper towels. This step ensures the sweet potato becomes tender and prevents excess moisture during cooking.
Step 2
Place the tortilla on an oven tray or an air fryer basket. Carefully crack the 3 fresh eggs onto the tortilla. Try not to break the yolks, and spread them out as desired.
Step 3
Arrange the thinly sliced sweet potato, ensuring it’s completely dry, in overlapping layers over the eggs. The natural sweetness and soft texture of the sweet potato will add a delightful richness to your pizza.
Step 4
Scatter the finely chopped tomato and fresh baby spinach over the sweet potato. This adds a beautiful pop of color and fresh vegetable flavor. Season with a pinch of salt and freshly ground black pepper to enhance the overall taste.
Step 5
Generously sprinkle the shredded mozzarella cheese evenly over the pizza. The cheese will melt beautifully, binding all the ingredients together. Place the prepared pizza into your air fryer or preheated oven, and bake until the egg whites are fully cooked. It will turn golden and delicious.
Step 6
In my test, I cooked at 180°C (350°F) for about 15 minutes, but the egg whites weren’t quite set, so I added a few more minutes. Cooking times and temperatures can vary depending on your specific air fryer or oven model. Keep an eye on it, and continue cooking until the egg whites are completely set and the cheese is melted and bubbly. Garnish with parsley flakes for an extra touch of flavor and visual appeal.
