Homemade Sweet Potato Cheese Sandwich: Simple, Savory, and Irresistible
Don’t let leftover sweet potatoes go to waste! Transform them into a delightful sandwich that’s both satisfying and incredibly tasty. This recipe features a generous filling of sweet potato and two types of cheese, creating a sandwich that’s perfectly crispy on the outside and lusciously creamy and sweet on the inside. It’s so filling, one slice is enough to keep you satisfied!
Essential Ingredients- 4 slices of bread
- 1 medium sweet potato (approx. 231g after peeling)
- 2 slices of cheddar cheese
- 2 slices of mozzarella cheese
Cooking Instructions
Step 1
Peel and roughly chop the sweet potato (weighing approximately 231g). Place it in a pot, cover with water, and bring to a boil. Once boiling, reduce the heat to medium and simmer for 15-20 minutes, or until the sweet potato is fork-tender. You’ll know it’s ready when a fork easily pierces through it.
Step 2
Drain the cooked sweet potato thoroughly. While it’s still hot, mash it until smooth using a potato masher or a fork. Ensure there are no lumps for the creamiest texture.
Step 3
To the mashed sweet potato, add 1 teaspoon of salt, 1 tablespoon of honey, and 2 tablespoons of milk. Mix everything together until well combined. This step enhances the natural sweetness and creamy texture of the sweet potato.
Step 4
Prepare your four slices of bread. On each slice, place one slice of cheddar cheese and one slice of mozzarella cheese. Don’t be shy with the cheese; more cheese means more flavor!
Step 5
Generously spread the prepared sweet potato mixture over the cheese on each bread slice. Ensure an even layer to prevent it from oozing out too much during cooking.
Step 6
Melt a little butter in a preheated frying pan over low heat. Place the sandwich, sweet potato side down, into the pan. Grill each side until golden brown and crispy. The key is to cook it slowly over low heat, allowing the cheese inside to melt completely.
Step 7
Once the sandwich is perfectly grilled and the cheese is gooey, carefully remove it from the pan. Cut it into your desired serving size, usually in half or quarters. You’ll see the cheese stretch delightfully as you cut.
Step 8
For a final touch, sprinkle a pinch of parsley flakes over the top for a pop of color and subtle herbaceous note. Your delicious and creamy sweet potato cheese sandwich is now ready to be enjoyed!
