Sweet Potato Candies (Goguma Mattang)
The Easiest Homemade Sweet Potato Candies Recipe!
My youngest, Dongdong, was craving sweet potato candies, so I decided to whip up a batch as a late-night snack using some smaller sweet potatoes I had. This recipe is incredibly simple and results in a delightful treat with a crispy exterior and a tender, sweet interior. Perfect for kids and adults alike!
Ingredients- 3 medium-sized sweet potatoes
- 3 Tbsp sugar
- 150cc grapeseed oil (about 2/3 cup)
Cooking Instructions
Step 1
I prepared 5 small sweet potatoes. Wash them thoroughly under running water to remove any dirt or debris.
Step 2
Pat the sweet potatoes dry with a paper towel. Then, cut them into bite-sized pieces. Cutting them to a uniform size will help them cook evenly, and it’s essential for the syrup to coat them properly.
Step 3
Pour the grapeseed oil into a wide pan, enough to cover the bottom. Add the cut sweet potatoes in a single layer. Avoid overcrowding the pan, as this will prevent them from crisping up properly.
Step 4
Evenly sprinkle the 3 tablespoons of sugar over the sweet potatoes. Cover the pan with a lid and heat over the lowest possible flame (low heat). Allow the sugar to slowly melt and caramelize, coating the sweet potatoes. This process takes about 15 minutes. Keep an eye on it to prevent burning.
Step 5
After about 15 minutes, lift the lid. You’ll see that the sugar has melted and transformed into a syrupy glaze, coating the sweet potatoes with a glossy sheen.
Step 6
Using a spatula or chopsticks, carefully flip each piece of sweet potato to coat the other side with the syrup. Cover the pan again and continue to cook for another 10 minutes. The sweet potatoes should start to turn a beautiful golden-brown color for the best flavor and texture.
Step 7
Now, remove the lid and increase the heat slightly to medium. Cook for an additional 5 minutes, stirring occasionally, until the syrup thickens and the sweet potatoes are a rich, caramelized brown. You want them to be crisp but not burnt. Once done, carefully remove the sweet potato candies from the pan and place them on a wire rack to drain any excess oil.
Step 8
There will be some residual oil and syrup left in the pan. You can simply leave it there.
Step 9
Arrange the drained sweet potato candies on a serving plate. For an extra touch, you can sprinkle some sesame seeds on top for added flavor and visual appeal. Enjoy your delicious, homemade sweet potato candies!
