Main Ingredients- Sweet potatoes: 310g (about 1-2 medium-sized)
- Canned tuna: 140g (including the oil)
- Egg: 1 large

Thoroughly wash the sweet potatoes. Peel them, then thinly julienne them into matchsticks. You’ll need approximately 310g. Cutting them thinly ensures even cooking and a pleasant texture.

Drain the excess oil from the canned tuna using a sieve, but don’t discard all the oil – include some of the tuna’s natural oil in the mixing bowl. This oil adds an extra layer of flavor to the pancakes.

Measure and add 54g of curry powder to the bowl. The curry powder beautifully complements the sweetness of the sweet potato and cuts through any richness from the tuna, creating a balanced flavor.
