[Diet-Friendly] Sweet Potato Egg Slut
Let’s enjoy sweet potatoes in a delicious way! This recipe is a delightful combination of creamy sweet potato and perfectly cooked egg, topped with savory ingredients. It’s a guilt-free, healthy, and satisfying dish perfect for breakfast or a substantial snack.
Key Ingredients for Egg Slut- 1 fresh egg
- 2 sweet potatoes
- 50g smoked duck breast (or chicken breast/chicken breast sausage as alternatives)
- 50g bell pepper (optional, or any other preferred vegetable)
- 50g cheese
- 30g pickled radish (or wrap sheets, chicken radish, or any leftover pickled vegetables)
Cooking Instructions
Step 1
First, prepare all the ingredients meticulously for the recipe. Smoked duck breast can be substituted with chicken breast or chicken breast sausage, or even bacon for a different flavor profile. Bell peppers add color but are optional; you can replace them with other crisp vegetables or omit them entirely. Even leftover pickled radish, wrap sheets, or chicken radish can be utilized! Making the dish with leftover ingredients makes it even more resourceful.
Step 2
Now, let’s cook the sweet potatoes until they are soft. You can boil them in water or cook them in an air fryer. For convenience, I used the microwave. Wash the sweet potatoes thoroughly, place them in a disposable bag, add a little water, and seal the bag tightly. This method helps retain moisture, ensuring the sweet potatoes cook up moist and tender.
Step 3
Microwave the sealed bag for about 10 minutes. The cooking time may vary slightly depending on the size of the sweet potatoes, but they are perfectly cooked when a chopstick can be easily inserted. It’s a quick and effortless way to cook them!
Step 4
While the sweet potatoes are cooking, finely chop the smoked duck breast, pickled radish, and bell pepper into small, bite-sized pieces. Aim for a size of about 0.5 cm, similar to what’s shown in the picture. This ensures that all the ingredients blend well with the sweet potato for a pleasant texture.
Step 5
Once the sweet potatoes are cooked and have cooled slightly, carefully peel them. Transfer the peeled sweet potatoes to a microwave-safe bowl and mash them thoroughly using a fork or a mashing tool. It’s important to use a microwave-safe bowl for this step.
Step 6
Add the finely chopped smoked duck, pickled radish, and bell pepper to the mashed sweet potato. Mix everything together evenly. Ensure the flavors from the vegetables and smoked duck are well combined with the sweet potato for the best taste.
Step 7
After mixing all the ingredients, press the mixture down firmly into the bowl using a spoon or spatula to create a flat, even surface. This makes it easier to place the egg on top and results in a neater presentation.
Step 8
Crack the fresh egg directly onto the sweet potato mixture. To prevent the egg yolk from exploding in the microwave, gently pierce it with a fork. This ensures the yolk cooks evenly. You can also sprinkle cheese over the egg for extra creaminess and flavor.
Step 9
Everything is now ready! Microwave for another 2-3 minutes, just until the egg white is set and the yolk is still slightly runny (like a soft-boiled egg). (Alternatively, you can bake in an oven or air fryer at 180°C/350°F for about 5-7 minutes.) Voila! Your delicious Sweet Potato Egg Slut is ready to be enjoyed. Serve warm immediately!
