How to Make Cheesy Sweet Potato Eggslut with Your Microwave
Introducing the ‘Sweet Potato Eggslut,’ a delightful creation where sweet potatoes and cheese come together for a heavenly bite. This incredibly easy dish can be prepared in the microwave, making it a perfect snack or brunch option with its wonderfully soft texture and rich flavor.
Ingredients- 1 medium sweet potato
- 70ml milk
- 1 egg
- 60g mozzarella cheese
- Pinch of salt
- Pinch of black pepper
- Pinch of parsley flakes
Cooking Instructions
Step 1
First, wash the sweet potato thoroughly and peel off the skin completely. Once peeled, use a fork or a masher to mash the sweet potato until it’s very smooth. It’s important to mash it well, ensuring there are no lumps.
Step 2
Add 70ml of milk to the mashed sweet potato. After adding the milk, mash it again with a fork, blending it until you achieve a smooth, mousse-like consistency. If the mixture seems too thick, feel free to add a little more milk.
Step 3
Transfer the prepared sweet potato mixture into a microwave-safe bowl. Then, using a spoon or your finger, gently press down the center of the sweet potato mixture to create a hollow indentation where the egg will be placed.
Step 4
Carefully crack the egg into the hollow you’ve made in the center of the sweet potato mixture. Place it gently to avoid breaking the yolk.
Step 5
Sprinkle a tiny pinch of salt over the egg. This helps to cut through any potential eggy smell and balances the overall flavors.
Step 6
Lightly season with a pinch of black pepper, according to your preference. The subtle spiciness will complement the sweetness of the sweet potato, creating a more complex flavor profile.
Step 7
To prevent the egg yolk from bursting during cooking, gently prick the yolk a few times with the tip of a skewer or fork. This creates small openings for steam to escape, ensuring the yolk stays intact.
Step 8
Next, generously sprinkle the 60g of mozzarella cheese evenly over the sweet potato mixture and the egg. As the cheese melts, it will envelop the sweet potato and egg, making the dish look even more appealing.
Step 9
Finally, sprinkle a pinch of parsley flakes over the top for garnish. This adds a lovely visual appeal and a fresh herbal aroma that enhances the overall dish.
Step 10
Cover the bowl with a microwave-safe lid or plastic wrap (pierce a few holes in the wrap). Microwave on high for about 6 minutes. The cooking time may vary slightly depending on your microwave’s wattage, so keep an eye on the cheese melting and the egg cooking, adjusting the time as needed.
Step 11
Once removed from the microwave, your warm and creamy Sweet Potato Cheese Eggslut is ready! Be careful as it will be hot, and enjoy this delicious treat!
