This recipe brings you the popular ‘Ggotgam Ssam Chaltteok’ (persimmon-wrapped mochi), a star item in many Korean rice cake shops, right into your home kitchen! Enjoy the perfect chewy texture of the glutinous rice dough enveloping a sweet and nutty filling. Making delicious Chaltteok at home has never been easier!
Ingredients- 5 medium-sized dried persimmons
- 20 half walnuts
- 225g glutinous rice flour (dry mix)
- 100g sugar
- 300g water
- 1/2 tsp salt
Cooking Instructions
Step 1
First, prepare the 5 dried persimmons. Cut each persimmon in half and remove the seeds. Then, place 2 half walnuts inside each persimmon half. You can use whole walnuts, but using two halves per persimmon fits the size well.
Step 2
Gently shape the persimmons, now filled with walnuts, into a rounded form. This step ensures the filling stays nicely enclosed within the persimmon. This creates the core of your mochi.
Step 3
Now, let’s make the glutinous rice dough. In a microwave-safe bowl, combine 225g of dry glutinous rice flour, 100g of sugar, 300g of water, and 1/2 tsp of salt. Stir well until the sugar dissolves. The amount of water might need slight adjustment depending on your flour’s humidity. Microwave this mixture for 3 minutes. Remove from the microwave and stir thoroughly with a spatula to break up any lumps and ensure even cooking.
Step 4
Return the bowl to the microwave and cook for another 1 minute, then stir again. Repeat this process one more time, for a total of 5 minutes of microwaving (3 mins + 1 min + 1 min), stirring between each interval. The dough is ready when it becomes very thick and stiff, making it difficult to stir with a spatula. Microwave times may vary slightly depending on your microwave’s wattage.
Step 5
Divide the cooked glutinous rice dough into portions of about 60g each. Flatten each portion of dough into a thin circle. Place one prepared persimmon filling into the center of the dough and carefully wrap the dough around the filling, pinching the edges to seal it completely. Make sure the persimmon is fully enclosed.
Step 6
Finally, prepare the coating for your Chaltteok. If you have access to ‘Geopi Gomul’ (a type of steamed rice flour coating), it will give your mochi a professional finish. Gently roll each wrapped mochi in the coating until it is evenly covered. Your delicious persimmon and walnut Chaltteok is now complete!
Step 7
If you can’t find Geopi Gomul, don’t worry! You can achieve a lovely texture and flavor by coating the mochi in cornstarch or even cocoa powder. Choose your preferred coating for a delightful finishing touch.
